If a french person talks about “couverts” it can also mean either place settings or (more generally) cutlery. That seems quite a likely route to “couverts” meaning “covers” in the sense of customers served.

Lovely instalment. I've always liked the word 'covers': I certainly think it comes in handy when needing to talk on the floor with staff in front of guests about paying customers (or cancelling/moaning customers) without direct reference! January such a scary and long month for so many: I'm glad you bucked that trend at least!

Haha I really relate to being stuck in a conversation with a chef/restaurateur who is throwing out restaurant terms and me nodding along and googling it later - and then of course using the same terms the following week, as if I knew it all along. Imagine my wonder when I learned about what PAX meant, when someone emailed it to me, posed as a question. I still don't even know why Pax is used.... just that it means number of guest...or covers lol

Yes, agreed. I can’t understand how that abbreviation gets to how many people. I’m not even sure why we adopted the French word, couverts.
