David Everitt-Matthias used to ask each of his team to create a cake for their birthday to share with the rest of the kitchen. I think quite a few of those ideas were developed and made it onto the restaurant menu and into his Dessert book. It's lovely to have the generosity to find room for that kind of creativity within the team.
