Big Kev gets my vote for employee of the month. Did he go on to great things?

Inspiring potato creations, thank you.

And thank you Lisa. Actually, that story was from many years ago, and Big Kev was my boss. He did many wonderful things and he’s now happily retired. And nearly forty years on, I still keep in touch with him.

That’s great, but does he still wash his taters in a washing machine?

Haha, it wouldn’t suprise me if he did.

I still remember that jacket potato mash! I think I just kept muttering that it was mash but it tasted of a lovely crunchy jacket potato and how did they do that? I only had to wait a decade or so …

Haha. All good things….

All of those great recipe ideas, though I do love me a potato. I'm tempted to pull out the ricer and chinois.

Thanks Matt. Hang on, you have a chinois?!

All the gear and no idea (but good mash). x

Loved this post! As I cannot get hold of nitrous oxide capsules, simpler versions of these potato dishes will be gracing my dinner plates for sure, particularly that dahl 😋

Thank you Shell. If you do the crispy Puy lentils, do dry them well after soaking, they spit a lot.

Good tip, thank you!

Did you survive Christmas and all the traditional overeating? Because I haven't haha! I am getting a mental image of a dining table somewhere in Latin America where humans and llamas sit together eating potatoes. Alas, the llamas didn't know they are what's for dinner.

I think we all go overboard a little bit. Ha yea, poor llamas.

This all sounds bloody lovely. Potato ricers give that perfect consistency and feel fun when you use them - sort of Play-Doh or Wonka vibes. But of course, those crispy fried lentils are what are yelling at me. I like them as crunchy bits in a dish of turmeric and chilli fried cabbage with coconut. Crispy bits - who doesn't love them?

Oh they’re great machines. Now I like the idea of chilli fried cabbage, that sounds very good.
