The restaurant opening date was getting closer, a solicitor messed up a license and we didn't paint a pipe. As well as a recipe for roasted white chocolate, fried pear and cashew praline 'tart'.
Great stuff. I think my stress levels go up with each chapter as we are all now vicariously opening a restaurant against the odds with you. I'm very glad you and Donna haven't yet once had to resort to violence.
This takes us back. We once gave ourselves 6 weeks from deciding it was a good idea to opening our deli/café. And, of course, we’d never done it before. Not retail, nor small business. Literally none of it. We got there but … Restaurant opening is different gravy! I’m looking forward to catching up with previous chapters.
We had a massive roll of brown paper unfurled on a landing wall at home, divided into the 6 weeks, peppered with post-its handwritten with ‘must do’ jobs. As the weeks moved on, so did the post-its, all moving right towards Day One. Eek. Then one day I said to JoJo, only we know what Day One is meant to look like. For everyone else it’ll be whatever they see when they walk through the door. We relaxed a LOT after that. Day One came and went and we had a cool 5 year adventure!
Over time, for sure. And the details count. We had a friend hand paint on our wall and it was probably one of my favourite bits. I’ll dig out a picture.

And it’s all we had. Seems strange now.

Ha, I read that as 6 months, went off to make a cup of tea, then processed it. Six weeks. Optimism is great isn’t it?!
